Massaged Kale Shredded Beet Salad

Do you ever get bored with your typical everyday lunch salad? With spring coming and everything starting to bloom, I need a little color in my life. This salad does just that for me! IMG_0654

Kale Shredded Beet Salad(gluten free, dairy free, egg free,soy free)

Ingredients:

1 medium sized beet with skin peeled off

1 large carrot washed or peeled

2 cups shredded kale

Juice for medium sized lemon

1/2 sweet onion

1/2 avocado

1 clove garlic

2 TBSP Liquid Amino

2 TBSP Tahini

1 TBSP Olive Oil

Sea Salt

Pepper

Instructions:

1. Take large bowl and add 2 cups of chopped kale

2. Add juice from lemon and  crushed garlic clove and massage into kale for around 1 minute

3. Shred Beet into bowl

4. Shred carrot into bowl

5. Chop 1/2 onion and add to bowl

6. Add 2 TBSP Liquid Aminos

7. Add 2 TBSP Tahini

8. Add 1 TBSP Olive Oil

9. Mix all ingredients together

10. Add Salt and Pepper to taste

11. Slice Avocado and add to top of salad.

 

 

I like to shred the beet right into the bowl. Less of a mess that way! IMG_0655     IMG_0656 Look at that colorful goodness! IMG_0657   Add the avocado and a couple of homemade crackers and you have a light delicious lunch!     IMG_0659 Enjoy this salad in under ten minutes!
